COOKIE SWAP BLOG HOP

THE ULTIMATE OATMEAL COOKIE
OATMEAL RAISIN CINNAMON PECAN COOKIES

I am so frustrated that blogger keeps saying "failed" for my photo uploads.  I don't want to get the train off schedule so am posting now. Will try to add the photos again :(



Ingredients
3 eggs, beaten
2 cup raisins
1 teaspoon vanilla extract
1 cup butter
1 cup packed brown sugar
1 1/2 cup white sugar
2 1/2 cups all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking soda
2 cups rolled oats
1 1/2 cup chopped pecans

Directions
1.Combine eggs, vanilla and raisins in a small bowl; cover and let stand for 1 hour.
2.Preheat oven to 350 degrees F (175 degrees C).
3.In a large bowl, cream the butter, brown sugar, and white sugar together. Sift together the flour, cinnamon, and baking soda; stir into the creamed mixture. Then stir in the raisin mixture, rolled oats, and nuts.
4.Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 10 minutes, or until lightly browned.

  2. That's a shame that Blogger is messing with your pictures. I used to be on Blogger and it could be so aggravating at times!

    These cookies sound really good. I have never made a cookie that involves beating the egg ahead of time and letting it sit for awhile. I'm imagining that this makes them very light and fluffy. Can't wait to try them!
