Pinspired - a Winner and a Loser

I tried a mixed beverage and an appetizer this week. Tailgating season is right around the corner and I am in search of a yummy purple drink to share with my fellow Pirates. On Pinterest a friend had pinned a Purple Martini and I thought that would be perfect.

the purple martini

This is the only photo I have of our attempt

You don't want the recipe! Let's just leave it at 2 attempts and both went down the sink. They were horrible!  So back to the lab to create a slushy purple drink....12 days to go!

But we do have a winner in the Jalapeno Popper dip.
This is the pinspiration

Jalapeno Popper Dip tastes like real Jalapeno Poppers but with half the work.

We found the original recipe very mild, even when I doubled the jalapenos and added diced fresh peppers it was still mild so if you like heat follow my recipe, it still could stand to be hotter but I have some heat seekers in the family. I also didn't use the extra Parmesan and melted butter the original listed for the Panko mixture. I really think it doesn't need the added grease of the butter.

the small bowl is really yellow on top because of the cornflake crumb
topping for SweetGirl's gluten free diet

JalapeƱo Popper Dip
2- 8 ounce packages cream cheese, room temp
1 cup mayonnaise
1 cup shredded Mexican blend cheese
1/2 cup Parmesan cheese

1-2 finely diced jalapeno peppers
1- 4 ounce can of chopped green chilies (undrained)
3-4 - 4 ounce cans of  sliced jalapeƱos (undrained)
1 cup panko bread crumbs

Preheat oven to 350. In your mixer combine the first 7 ingredients mixing until smooth. Spread the dip into a greased 2 quart casserole. Sprinkle Panko evenly over the dip ( for SweetGirl's gluten free dip I used cornflake crumbs) Bake for about 20 minutes. Dip will be bubbling and Panko golden brown. Serve  crackers.

We really enjoyed it but I am much more a cheddar cheese jalapeno popper girl so it didn't remind me that much of them. If you are int cream cheese jalapeno popper camp you'll love these. Maybe next time I'll work some cheddar into it.

Have you been pinspired lately?
I'd love to hear somethings to try and even those to avoid...
I'm telling you steer clear of that Purple Martini recipe ;)

  8. There is a cocktail called Purple Rain, which is vodka, blue curacao (SP?)and cranberry juice. Might that fit the bill with a good helping of crushed ice?
