Unexpected Cookies Today!

Oatmeal Raisin Cinnamon Pecan Cookies

Cate over at Behind the Purple Door is having a Virtual Cookie Exchange today. I didn't realize it until I was catching up on blogs . Never one to turn down cookie ideas (the Chosen One has a bit of a cookie control problem...like me and potato chips) I thought I'd see if I had an old post I could pull up. This one seems perfect (it's from November of 2009 and appears to be the first time Deb commented!) Hope you enjoy, how could you not, I like this and don't like raisins at all!

Ingredients
3 eggs, beaten
2 cup raisins
1 teaspoon vanilla extract
1 cup butter
1 cup packed brown sugar
1 1/2 cup white sugar
2 1/2 cups all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking soda
2 cups rolled oats
1 1/2 cup chopped pecans

Directions
1.Combine eggs, vanilla and raisins in a small bowl; cover and let stand for 1 hour.
2.Preheat oven to 350 degrees F (175 degrees C).
3.In a large bowl, cream the butter, brown sugar, and white sugar together. Sift together the flour, cinnamon, and baking soda; stir into the creamed mixture. Then stir in the raisin mixture, rolled oats, and nuts.
4.Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 10 minutes, or until lightly browned.

Jump over to Cate's to see more links to cookie recipes and hers for a yummy chocolate peppermint one.
Don't forget to come here Friday for more cookies!

The Glorious Virtual Christmas Cookie Exchange is this Friday and will be a linked up event so just pop over and link up to your post. You should link directly to the post not just your blog and include the recipe and at least one pic in the blogpost. Feel free to let your followers and blogging friends know they are welcome to join in, the more cookies the better and they'll all be calorie free!

  1. Yummmmmmmm!!! These sound great and I just so happen to have all the ingredients on hand.

How funny that your recipe was in a post where I had commented - all the way back in November 2009. That's awesome! :o) I'm glad we are blog friends, Beverly!
