Roasted Corn Salsa

 ROASTED CORN SALSA



INGREDIENTS
   3-4 ears fresh corn shucked and off the cob unless grilling or 1 can yellow kernel corn (that;s what I used, corn at the grovery looked awful and I didn't have time to drive to the Farmer's Market
    1/2 can black beans, drained and rinsed
    1/2 cup red onion diced
    3 medium tomatoes, diced (add juice as well)
    1 cup of your favorite bottled salsa
    2 T lime juice
    salt & pepper to taste
    2T cumin
    2 fresh jalapenos, diced (store didn't have any @@ but we'd definitely use)
    optional I guess is adding cilantro but I can't stand it

DIRECTIONS

Roast corn  in 450 degree oven for approximately 20 minutes or if using fresh corn grill directly on the grill
Add all ingredients and mix well.
Chill or not
Serve with tostito chips (but one friend ate as a side dish and was quite happy)
