Pinterest Inspired

The recipe pictured above is a panko crusted spinach ricotta tomato basil stuffed chicken breast, now that's a mouthful. I thought it sounded tasty but really didn't want to go to the grocery store so did some change ups. My breasts were stuffed with ricotta, spinach, parmesan, minced garlic, Italian herbs and sun dried tomatoes. After sealing mine I dipped them in milk then a combination of bread crumbs and parmesan cheese. I could have easily stuffed 4 breasts but did not stuff as fully as she did. I struggled with how to stuff fully but have sealed enough for the first cooking step which is to pan fry until golden brown.
My take was a winner with Stephen saying he'd be happy with a repeat but would like more "stuffing". I would probably add  another clove of garlic (I had doubled hers), more sun dried tomatoes and a bit more salt.  We split one breast and I served them on a bed of cooked spinach with garlic mashed potatoes.






For dessert we had the 1-2-3 chocolate mug cake

I can't find the one I liked on Pinterest, if I had only seen the ones I'm seeing now I probably would never have tried it.  Thoroughly mix one box of angel food cake mix with any flavor cake mix you want. Now with the one I used you end up with a ton of mix but it's not like it's going to go bad and I've already sent the Beast off with some of it.  I used Devil's Food so I guess this is the Angel's Devil Cake. I also think I am going to refer to all of my mug cakes as 3-2-1 Cakes. You use 3 tablespoons of the mix, 2 tablespoons of water (stir well with a fork) and cook for 1 minute in the microwave. I then poured warm caramel on top (that's why mine looks moister) and finished it off with whipped cream. Yummy and easy!

  5. Oh yum! This would go down well here! I've made the cake in a cup before, but I didn't use a pre-prepared mix, there was no wastage that way.

    I am exclaiming that I am happy right now!
