Welcome to the June edition of Lighten Up! Today three marvelous bloggers will be tempting you with cold salads for your (more than likely, except my Aussie friends) hot July. Independence day is this coming Monday and for Americans that usually translates to get togethers, picnics and barbecues. All of today's recipes are perfect for taking on these outings. My recipe may not be new to many of you. I made it a ton many years ago but just started making it again. It seems most people haven't had it in years so it seems like a fresh recipe.
Summer Seven Layer Salad
2 cups shredded sharp cheddar cheese, setting 1/2 cup aside for topping
1 small red onion, diced
grape or cherry tomatoes quartered
1 (10 ounce) packages frozen green peas, thawed, drained
1 cup mayonnaise
1/2 cup sour cream
1 pkg ranch dry mix8 oz bacon, cooked and chopped
Amount Per Serving : Calories 180 Sodium 262 mg

This looks delicious Beverly!! It is Canada Day on Thursday, this year I am heading out of town, but we like to celebrate with having friends over. This looks like a wonderful recipe for any outdoor gathering!
