Monday Menu Sharing

WEEK OF MARCH 1st


MONDAY: Grilled Shrimp, Rice Pilaf, Asparagus, Pineapple


TUESDAY: *Bacon Cheeseburger Meatloaf, Homemade Mashed Potatoes, Green Beans, Rolls


WEDNESDAY: Halibut, Baked Potato, Broccoli


THURSDAY: BBQ Chicken, Cowboy Beans, French Fries, Salad


FRIDAY: Tortilla Soup with Tortilla Strips, Brownies


SATURDAY: Dinner out with Friends


SUNDAY: Company Casserole, Salad, Hard Rolls

Bacon Cheeseburger Meatloaf

Ingredients

1 pound ground beef (*may substitute turkey)
10 slices of bacon, cooked and crumbled
( * I cut my bacon up with kitchen shears then fry, I do this for a
lot of recipes-so much easier)
1 8z pkg of grated sharp cheddar cheese
2 lg eggs, lightly beaten
1/4 cup toasted bread crumbs
1/4 cup mayonnaise
1Tbsp Worcestershire Sauce
1/4 tsp salt
1/4 tsp ground black pepper
1/3 cup ketchup
2 Tbsp prepared mustard
1 3 oz can French Fried Onions
Directions
Preheat oven to 350 degrees F
In large bowl mix 1st 8 ingredients together well (*hands work best)
In small bowl mix ketchup and mustard
Mix 1/4 cup of ketchup mixture into meat mixture
Form into loaf shape to cook on a rack or put in 9x5x3 loaf pan
Spread remaining ketchup mixture on top
Bake for 40 minutes
Spread French Fried Onions on top
Cook an additional 10-15 minutes
Remove from oven and let sit before slicing.

  1. Thanks for the recipe. We love bacon in this house. Can't wait to try your verison, but might have to give "someone" a few weeks before it appears on the dinner menu!
